Valentina Amati is the pivot on which the refinement and nutritional properties of our food revolve.
She is an Executive Chef certified by the Culinary Institute of America in New York, with a Masters in F&B Management from Cornell University New York.
She deals with haute cuisine following all the BOH and FOH aspects of the accommodation facilities where she has worked over the years, in Italy and abroad.
She worked for the Maccioni Group at Le Cirque in New York, as Executive Assistant and then Chef de Cuisine for Le Cirque Mumbai c / o Leela Palace Hotel ***** L - India. Here she receives the title of best Italian restaurant in Asia for two consecutive years.
In Italy she works as Chef Consultant for numerous Italian restaurants, and is now dedicated to the SPiCE29 and NoMi Gastro•Bar projects.

WHAT BREAKFAST ARE YOU OF?
noMi breakfast begins with an entrée that will be delivered to each guest containing a brioche, homemade bread served with butter and jam and, on request, honey or spreadable chocolate.
In the small buffet, single-serving cereals, yoghurt in various flavors and fresh seasonal fruit are available.
For sweet lovers it is possible to choose the SWEETY tasting, a dish containing a selection of four homemade desserts made fresh every day. If you prefer salty tastes, the SAVORY tasting offers a selection of four savory choices with some international influence.
The breakfast menus are three and are displayed in rotation so as to offer you a different experience every day!
Or you can also order low carb pancakes or two eggs, as you want.
